Easter Eggs are generally pop culture references and other fun topics the developers place into the game for players to find, and of which don't have any large direct impact on the game's progression.

Cultural references

Developers

The Dwemer Script appearing in this game, predominantly on the Dwemer Pipes, is a reference to one of the Developers, Gary Noonan.

Final Fantasy

In the Urshilaku Burial Caverns, there is a room called Kefka Burial, which is a reference to Kefka, the antagonist in Final Fantasy VI.

Fishy Stick

Fishy Sticks are normally used on the Bethesda Forums to welcome new members. Morrowind recognizes this, and included Capn's Guide to the Fishy Stick, which is entirely unreadable.

Icarus

When starting out from Seyda Neen, players will often encounter a Bosmer called Tarhiel who will quite literally fall from the sky. From him can be obtained the Scroll of Icarian Flight, and his journal, which reveals a story similar to the legend of Icarus.

Indiana Jones

"Indiana Jones'" corpse

In the Omalen Ancestral Tomb, a skeleton can be found seemingly crushed under a rock, grasping for a ruby. Its identity is revealed after reading his supposed journal, titled A Dying Man's Last Words.

Latin

A deceased former Census and Excise governor in https://www.twitch.tv/videos/118736045, Processus Vitellius's name can be translated to mean "The process of vigilance". This was likely done due to him working for Census and Excise which is an organization dedicated to managing census counting, and for tax/excise purposes for the Empire.

Pokémon

There is a body of a Peke Utchoo and his accompanying note. Peke Utchoo is a reference to the very popular Pokémon Pikachu.

Sun Tzu

The book by Zurin Arctus, The Art of War Magic (which also appears in Oblivion and Skyrim), is a reference to Sun Tzu's famous book, The Art of War.

M'aiq the Liar

Main article: M'aiq the Liar/Morrowind

M'aiq the Liar is a recognizable name in The Elder Scrolls franchise. He has appeared in Morrowind, Oblivion, Skyrim, and Online, and serves as a sort of line between the developers and the players.

One particular thing he says in Morrowind is about Weresharks, in which he says: "I have only met one, but he was afraid of the water." This is a reference to were-creatures from The Elder Scrolls II: Daggerfall, belatedly returning in the Morrowind expansion Bloodmoon.

When asked about multiplayer, he replies with a clear reference to L33t speak, as well as the want for multiplayer in the game, he says "M'aiq does not know this word. You wish others to help you in your quest? Coward! If you must, search for the Argonian Im-Leet, or perhaps the big Nord, Rolf the Uber. They will certainly wish to join you."
