It is more likely the Man-Bull is a title referring to the character's strength and willingness to charge into battle rather than him being a literal bull. Being so literal is like saying Mjoll from TES: Skyrim was actually a lion. That and the physical appearance of offspring stems mainly from the mother they wouldn't look like the weirdass mutant bull baby in the picture that was added.
