two handed is slow attacking but high damage
one handed is quicker but weaker
WIth a two handed weapon you can deal high damage and can block. With dual one handed weapons you can even deal more damage very fast but you can't block. With a shield and an one handed weapon, I'm sure you wanna be a solid tank so why not wear heavy armor?
Obviously Heavy armor with a two handed.
If you can kill it quick enough, you wont have to really worry about blocking.
All these sets have different perks for different situations, but supposing you can LITERALLY change armor in an instant, and weapons dont take too long to unsheath, Id go for the quick-killer, unless you're in a specific fight.
And don't forget magick. That might be a good idea, having fast healing in one hand or setting up a rune trap for a patrolling guard, or conjuring a familiar, then switching to two handed.
So, really, it depends who you're fighting, but you're best bet is heavy armor with a two handed.

Actually, if you include perks and everything, they are pretty much equal.
Also, if I saw a heavy armor guy, I would sneak up and slit his throat no harm done. ( Well except to the heavy armor guy. )
Light armor or heavy armor does not make a big difference, they both reach the armor cap very fast. However, light armor gives you 50% stamina regen increase if you are good at it. Its more about preference, really, cause much of the perks are kinda useless (custom fit, matched set, well fitted, matching set are damned useless cause with them my armor rating hit 1500++ and thats useless). So, its all down to aesthetics on this one.
One handed is superior to two handed for a few reasons:
1. The improvement to weapons is linear, not scaling. For example, a daedric sword with +50 base damage through smithing will deal 64 dmg per hit (no multipliers). A daedric greatsword with the same improvement does 74 dmg per hit (no multiplier). Enchantment damage is also constant between both types, so in the end of the day, attack speed trumps raw power per strike.
2. You can take two one hand for max DPS. For example two 65 dmg daedric swords = 130 dmg, while a daedric greatsword is only 75 dmg. With a good enchanting and smithing, each daedric sword can do 365+162 (500 dmg), totalling 1000++dmg with no issue, while a daedric greatsword is likely to hit only 650-700 dmg per hit. Dual wielding attacks is faster than greatsword attacks as well.
3. You can take a shield or restoration spell with your 1 handed weapon. A shield gives superior blocking as compared to a weapon (unique shields like spellbreaker have a good effect that no two hand can have). Also, a healing spell+respite in your left hand is a good way to keep power attacking.
4. One handed power attacks are (definitely) easier to land and they consume much less stamina for the same doubled damage (ebony blade is the only exception).
5. There are many good one handed unique weapons, like windshear, chillrend, mace of molag bal, and dawnbreaker, while there are only a few good two handed ones, like volendrung (which is not that good)
Still, while one handed is more versatile and also superior if you specialize in both, the end still rests on which weapons you like the most. If you like two handed weapons, for all their flaws, its OK to use them. This is not intended as a guide of any sort to playing. Its a RPG and you shoud be experimenting to see which suits you best.

Not if you have the steed stone, I use Heavy armour with the steed stone and I use 2 handed for doing heavy damage, but recently, I have been leaning over to duel wielding Soul Render and Blood Scythe
Me personally, would choose light armor, one handed, and a shield.
