What do you think would happen when ESO's servers go down? Honestly, I hope Bethesda Softworks/ZOS would edit it a bit and give it to the players as a singleplayer game, not very likely, but that's what I hope will happen.

Most likely what happens with every other MMO that shuts down.
However, with how well ESO has been doing lately, it probably won't be happening anytime soon.
I hope they modify it and make single-player too. Obviously Cyrodiil would be a bit different (no more PvP, so I'm not sure how Keeps and Elder Scrolls would work), and everything from Group Dungeons to Trials would need to be made solo-able.

I think they could make it so that there are squads of units (Dominion, Covenant, Pact) who will make their way to keeps and you need to aid/attack the defending force of said keep to conqeur/keep it. As for the Elder Scrolls, they could make it so that once Cyrodiil is conqeured (the only reason the Scrolls were stolen was to take Cyrodiil) you can return them to the Ancestor Moth Priests.
Perhaps they could just allow for private servers to be hosted or something. It really is a beautiful game world, I'd love to be able to experience it forever without relying on ZeniMax's servers.
